Pumpkin Stuffed with Quinoa

Ingredients

  • Small Pie Pumpkin or Acorn Squash
  • Quinoa, cooked
  • 1 tbsp. butter
  • Onion, minced
  • Garlic, minced
  • Cranberries, soaked in hot water for 10 minutes
  • Pecans or Walnuts, toasted then crushed
  • 1 tbsp. thyme
  • 1 tbsp. sage
  • Salt and Pepper

Instructions

  1. Split squash in half
  2. Roast for 35-40 minutes at 350 degrees F
  3. Cook quinoa
  4. Sauté onion and garlic in butter
  5. Combine quinoa, onion, garlic, pecans, cranberries, thyme, and sage
  6. Remove squash from oven
  7. Add quinoa mix and serve immediately
