Fresh Egg Pasta

  • 2 – 2.5 cups flour
  • 2 – 3 eggs
  • 1 tsp salt
  • 1 – 2 oz water


  1. Mix together ingredients until they reach a bread-crumb-like texture
  2. Once the dough forms into a ball begin to knead it
  3. Now cover the dough and check on it in an hour
  4. Once the dough is fully hydrated roll out your pasta
  5. If you have a pasta machine, now would be the time to use it – otherwise, just roll away!
  6. If the dough starts to stick use a little more flour
  7. Cut the pasta with a pizza cutter, or whatever else you have around
  8. Dust with a little extra flour and cook for 3-4 minutes
  9. Season with a little salt, parmesan, oil and parsley as desired
