White Bean “Burgers”

Ingredients

  • 4 cups beans, already soaked
  • 1 tbsp. butter or olive oil
  • 1 onion, minced
  • 1 carrot, shredded
  • 3 cloves garlic
  • 1 tbsp. sage
  • 1/2 cup bread crumbs
  • 1 egg, beaten
  • salt & pepper

Instructions

  1. Mash beans leaving some texture
  2. Heat pan and soften onion, carrot, garlic and sage for 2-3 minutes
  3. Combine vegetables with beans, bread crumbs, egg and salt & pepper
  4. Shape into patties and refrigerate for 2-3 hours, or prepare the night before
  5. Cook in a large skillet for 3-4 minutes a side, or until golden brown
  6. Serve as a burger or on sautéed cabbage
